Colour-swirl meringues

 



Preparation Time: 30 Minutes

Cook Time: 1 Hour 25 Minutes

Serves: Makes about 22 small or 10 medium

Pretty and fun to have at parties. Try pastel colours for easter or any colour combination can be made to match a kids party too.

Ingredients

2ml cream of tartar

250ml (210 g) castor sugar

2ml vanilla essence

3  extra-large egg whites, at room temperature

125ml (more or less depending on pan size) Cornfour, for dusting pans

3  to 4 drops red food colouring

3  to 4 drops green food colouring

Method

  • Beat egg whites until foamy. Add cream of tartar and continue to beat until soft peak stage.
  • Gradually add sugar, beating constantly until stiff peak stage. Add essence and mix. Divide mixture in half. Add red colouring to one half and add green colouring to the other half. Swirl each mixture lightly.
  • Grease baking trays and line with greaseproof paper. Grease again and dust lightly with cornflour. Spoon heaped teaspoonsful of meringue mixture onto trays and spoon into a piping bag, fitted with a medium star nozzle, and pipe into nests or shapes of choice.
  • Bake in a preheated oven at 120 °C for about 1 ¼ hours. Switch off oven and leave to dry out for another hour. Store in an airtight container.
